Job summary

Ole & Steen is seeking a Technical Compliance Lead to actively protect and coach on food safety on the production floor. You will own HACCP, hygiene and allergen standards, with the authority to challenge when needed and drive a culture where safety matters for everyone involved.

The role requires a background in bakery/food manufacturing and comfort with audits (SALSA/BRCGS). You will monitor controls, investigate root causes, and maintain audit readiness daily while mentoring colleagues and

Qualifications

• Knowledge of HACCP, hygiene and allergens with ability to explain why it matters
• Background in bakery or food manufacturing, ideally with quality or technical experience
• Comfortable around audits and certification standards (SALSA, BRCGS or similar)
• Ability to distinguish genuine food safety risks from minor quality issues
• Investigative mindset to determine root causes and fix the underlying problem
• Ability to uphold standards under pressure and enforce them respectfully
• Clear communicator and practical coach who earns influence through trust

Responsibilities

• Walk the production floor, observe, and intervene early before issues escalate
• Check standards at the start, middle and end of each run: hygiene, allergen control, traceability, paperwork and product quality
• Monitor critical safety controls and pause production if something isn’t right
• Root-cause issues and follow through until they're fixed—not just patched
• Champion allergen control with correct segregation, changeovers and labelling
• Keep the site audit-ready every day (SALSA/BRCGS)
• Coach colleagues to understand not just what to do, but why it matters
• Lead by example on food safety culture and encourage speaking up
• Track KPIs, non-conformances and audit findings to drive improvements

Technical Compliance Lead

We need a Technical Compliance Lead who'll be visible where it matters most: on the production floor. Someone who protects the standard, isn't afraid to challenge when something isn't right, coaches people to understand why it matters, gets to the root of problems, and helps build a culture where food safety and quality belong to everyone.

THE OPPORTUNITY

• £34,000 – £40,000, depending on experience
• Night shift: 8 pm – 5 am
• 5 days out of 7, including 1 weekend day
• A leading role across food safety, HACCP, GMP, allergens, traceability and audit readiness — with the authority to challenge or when standards are at risk

WHAT WE'RE LOOKING FOR

• Someone who knows food safety inside out — HACCP, hygiene, allergens — and can explain the "why" behind it, not just enforce the rules
• A background in bakery or food manufacturing is a big plus, ideally with some quality or technical experience
• Comfortable around audits and certification standards (SALSA, BRCGS or similar) — you know what "audit-ready" really looks like, every day, not just before the auditor arrives
• A sharp eye for telling a genuine food safety risk apart from a smaller quality issue, and the confidence to make the right call
• A natural investigator — when something goes wrong, you want to know why, not just fix the symptom
• Someone who can hold a standard under pressure, and say "this isn't good enough" — respectfully, but without hesitation
• A clear communicator and practical coach who earns influence through trust, not job title

A NIGHT IN THE LIFE

• Walking the production floor, watching, listening, and stepping in early — before a small issue becomes a big one
• Checking standards at the start, middle and end of every run: hygiene, allergen control, traceability, paperwork and product quality
• Keeping an eye on critical safety controls, with the confidence to pause production if something's not right
• Getting to the bottom of issues and complaints using proper root-cause thinking, then following through until they're fixed — not just patched
• Championing allergen control, making sure segregation, changeovers and labelling are done right, every single time
• Keeping the site audit-ready every day (SALSA/BRCGS) — not just when the auditor's due
• Coaching colleagues so they understand not just what to do, but why it matters
• Leading by example on food safety culture — listening to concerns and encouraging people to speak up
• Tracking the numbers — KPIs, non-conformances, audit findings — and using them to focus where improvement is needed most
