Job summary

WildLand Limited is seeking a passionate kitchen professional to join our Highlands team as Sous Chef or Chef de Partie, supporting the Head Chef in delivering honest, provenance-driven meals at exceptional standards. You will lead a small, collaborative kitchen and interact with guests at the point of dish finishing and presentation.

You will work across multiple venues in the Highlands, plan supplies with awareness of remote locations, build local supplier relationships, and mentor junior

Qualifications

• Proven experience as Sous Chef or Chef de Partie.
• Experience in private chef environments or fine dining setups.
• Excellent team player with guest-focused communication.

Responsibilities

• Implement the culinary vision of the Head Chef in relation to the venue.
• Deliver a relaxed and interactive dining experience for our guests by engaging with them at the point of dish finishing and presentation, explaining each dish and answering their questions.
• Collaborate with the Head Chef in reviewing guest preferences ahead of their planned visit and create dishes that accommodate specific requests, allergies and dietary needs, working closely with FOH and reservations.
• Plan supplies with cognisance of the remote location of our venues.
• Build strong relationships with local suppliers to access high-quality ingredients.
• Support team development and menu innovations during quieter periods.
• Supervise the Chef de Partie and other kitchen staff to maintain a cohesive team and top guest experience.

Key Responsibilities

• Implement the culinary vision of the Head Chef in relation to the venue

• Collaborate with the Head Chef in reviewing guest preferences ahead of their planned visit and create dishes and meals that accommodate specific requests, allergies and dietary or faith requirements, and working closely with other operational departments such as the front of house and reservations team.
• Partner with Head Chef in the planning of supplies, taking cognisance of the remote location of our venues
• Build strong relationships with local suppliers in order to access local ingredients of the highest quality
• Comfortable moving between busy and quiet periods and utilising the latter in a positive way e.g. team development, new menu development etc
• Supervise the Chef de Partie and other kitchen staff, ensuring that a “one team” approach is always maintained and that everyone works collaboratively to provide the best guest experience, and to support each other

Who you are

To be successful in this role, you will be a passionate chef with proven experience as a Sous Chef or Chef de Partie, ideally within a private Chef environment, or a fine dining ‘Chef’s Table’ set up. You’ll be an excellent team player, warm communicator, confident in interacting with guests and comfortable with the remote nature of a role within one of our Highland regions.
