Relais & Chateau at Thornbury Castle are seeking a Sous Chef to join our talented brigade of chefs. You will work in a unique and beautifully restored Castle and four Red Star boutique hotel and create truly memorable and impressive 5* dishes for our guests in our 3 Rosette restaurant.

About Us

Set on 15 acres of beautiful land, Thornbury Castle Hotel is the only Tudor Castle operating as a hotel in England. The Castle has recently undergone a multi-million pound refurbishment, restoring its regal grandeur. Located 20 minutes from Bristol, it offers 26 rooms and suites, an award-winning restaurant, bar, and two unique meeting and conference spaces. Our food style is modern British, using locally sourced produce from our kitchen garden and the southwest. We operate 7 days a week, serving breakfast, afternoon tea, dinner, and Sunday lunch, as well as hosting weddings and events. Our goal is to deliver “refined and personalised hospitality,” making our hotel a place where guests can relax, enjoy, and feel special in a unique setting with exceptional staff.

Job Description
  • Full-time permanent position, 48 hours per week
  • Salary from £40,000 per annum, depending on experience
  • Additional share of service charge and tips paid monthly
  • Responsible for food preparation and service
  • Collaborate with the Executive Head Chef to create menus
  • Lead the kitchen in the absence of the Executive Head Chef
  • Assist in training new kitchen staff
  • Maintain all food safety and health and safety procedures
  • Demonstrate natural culinary talent with attention to detail
  • Work calmly and proactively, using initiative
Qualifications
  • A talented Chef with a professional approach, passion, and flair for food
  • Experience in a 3 AA Rosette or 1 Michelin star environment is ideal, or at least 5 years' experience in a 2 AA Rosette setting or higher
  • Calm, mature, and resilient under pressure
  • Excellent team player with strong communication skills
  • Ambition to succeed at the highest levels
