Job summary

Coleg Cambria invites applications for a Sous Chef at the Llysfasi campus. This full-time role (37 hours per week) combines high-end culinary creativity with workplace stability and purpose.

Salary is £29,451 to £32,236, with a strong emphasis on quality, safety and service for college outlets and residential hostel catering. You will lead the pass, oversee stock, HACCP compliance and modern IT systems, and support across multiple sites.

Qualifications

  • Level 3 Food Safety & Hygiene qualification (or willingness to achieve on appointment).
  • At least 3 years’ experience in a professional kitchen at Chef de Partie level or above.
  • Demonstrable experience of leading kitchen operations independently.
  • Experience supervising or mentoring junior staff, learners, or apprentices.

Responsibilities

  • Lead Shift Operations: direct senior kitchen staff to deliver high-standard service across Beri outlets.
  • Deliver Culinary Excellence: run seasonal, cost-effective menus with allergen control and presentation.
  • Manage Operations & IT: perform stock counts, ordering, cost tracking, and compliance records.
  • Maintain Safety & Hygiene: own HACCP, health & safety, and EH standards.
  • Support Across Sites: cover other college outlets during peaks or staff absence.

Are you a talented chef looking to combine high-end culinary creativity with real workplace stability and purpose?

As Sous Chef at Beri, you will take the lead on the pass, execute fresh seasonal menus alongside our Executive Chef. You’ll run live service, oversee stock control and HACCP compliance, and craft modern, sustainable food.

You will step up as the senior chef on shift, direct daily kitchen operations, use modern IT management systems and provide cover on our additional commercial outlets. In addition to our commercial outlets, a key part of this role involves overseeing the residential hostel catering at our agricultural Llysfasi campus. You will take ownership of daily meal services for resident students living on site, managing dietary requirements and stock with clear, structured routines. This is a rewarding chance to provide wholesome, high-quality dining while creating a warm, welcoming, and consistent environment for young learners away from home.

What You Will Do
  • Lead Shift Operations: Act as the senior chef on the pass, directing Chef de Parties and Hospitality Assistants to run smooth, high-standard service across Beri outlets and college functions.
  • Deliver Culinary Excellence: Execute seasonal, cost-effective, and sustainable menus created by the Executive Chef, ensuring strict allergen control and modern food presentation.
  • Manage Operations & IT: Conduct regular stock counts, manage ordering systems, track costs, and maintain accurate compliance records using digital tools.
  • Maintain Safety & Hygiene: Take direct ownership of kitchen cleanliness, HACCP compliance, health and safety, and Environmental Health standards.
  • Support Across Sites: Provide cover at other college outlets during peak periods, events, or staff leave.

Essential Requirements

  • Level 3 Food Safety & Hygiene qualification (or willingness to achieve on appointment).
