Job description

C&N Recruitment are currently recruiting for a Sous Chef to join a fantastic kitchen team in their brasserie restaurant at a 4* Hotel. The Brasserie will soon be going through a stunning refurbishment, and we are on the search for a talented Sous Chef to help evaluate the dining experience.

You will be responsible for the daily operations of the kitchen and food production, ensuring the quality of the food is maintained. You will also assist the Head Chef with ensuring all policies and procedures are followed.

The Job
  • Prepare and cook dishes to the highest quality standards, adhering to recipes and presentation guidelines. Monitor the quality of food throughout preparation and service, ensuring consistency.
  • Oversee food quantities and portioning to meet restaurant demand, minimize food waste, and control costs in line with our budgets.
  • Support and work closely with the Head Chef to ensure smooth kitchen operations. Step in to lead the kitchen team when needed and assist in developing new menu items.
  • Follow all company health, safety, and hygiene policies. Report maintenance needs, accidents, and any unsafe working conditions.
  • Collaborate with the Head Chef and Executive Chef to develop and refine the Brasserie menu in line with seasonal ingredients and local flavour.
  • Ensure allergens are clearly displayed and alternative options are available for diners with specific dietary needs.
  • Support our Banqueting team with culinary expertise during busy functions or events as required.
