About the Venue:

From the team behind Crispin and Bistro Freddie, Canal is a new waterside restaurant opening this summer at Taxi House Hotel, overlooking the Grand Union Canal. It offers a space where thoughtful food meets natural wines, music, and community, featuring a sun-soaked terrace and a floating DJ barge. We aim to build a passionate kitchen team focused on seasonal cooking, quality produce, and genuine hospitality, providing a unique opportunity to shape a kitchen from the ground up.

The Role:

As Sous Chef, you will be a key part of our leadership team, working closely with the Head Chef to implement Canal’s food philosophy. Your responsibilities include managing daily kitchen operations, mentoring junior chefs, and assisting in menu development rooted in seasonality, sustainability, and flavor.

Key Responsibilities:
  1. Support the Head Chef in all aspects of kitchen leadership.
  2. Lead service ensuring consistency, pace, and quality of dishes.
  3. Assist in designing and developing seasonal menus and daily specials.
  4. Mentor and train chefs at all levels.
  5. Maintain strong supplier relationships for quality produce.
  6. Oversee stock control, GP targets, and kitchen organization.
  7. Uphold cleanliness, food safety, and compliance standards.
  8. Contribute to the culture and vision of the kitchen as a creative and dependable leader.
Candidate Profile:
  • Proven experience as a Sous Chef or strong Junior Sous Chef in a quality-driven kitchen.
  • Passion for seasonal produce and thoughtful cuisine.
