Green & Fortune Ltd. is seeking an experienced Sous Chef for our Rotunda Restaurant in Kings Place, London. The role covers leadership of the on-site kitchen, coordinating with the events kitchen, and driving menus that emphasize provenance and sustainability.

You will oversee a live-fire, embers, and coal kitchen with on-site butchery and bakery, guiding a team to deliver exceptional seasonal dishes and memorable hospitality experiences.

Qualifications

• 2+ years in a similar role.
• Experience with local produce and seasonal menus.
• Experience in a high-volume kitchen.
• Ability to train and mentor junior staff.

Responsabilités

• Train and develop a team of chefs on quality produce and sustainability.
• Develop and maintain new menus focusing on provenance and integrity.
• Ensure the smooth running of the main restaurant kitchen and coordinate with the daily catering plan in the building.
• Deputize for the Head Chef ensuring H&S and food safety compliance.
• Manage stock taking and ordering through strong relationships with our farm and producers.

We are currently looking for an experienced Sous Chef!

You’ll bring your vibrant personality and brilliant skills to our flagship Rotunda Restaurant featuring on-site butchery and bakery, and a live fire over embers and coal kitchen.

What you'll do

• Train and develop a team of chefs’ on quality produce and real cooking, upholding standards of freshness, seasonality and sustainability.
• Develop and maintain new menus focussing on provenance and integrity.
• Ensure the smooth running of the mainrestaurant kitchen, coordinating with the wider daily catering planin the building.
• Deputize for the Head Chef ensuring H&S and FS compliance.
• Manage stock taking and ordering through a strong relationship with our farm and producers.

You’ll (ideally!) bring 2+ yearsexperience in a similar role, in a kitchen that uses the freshest of locally sourced products.
