Job summary

Il Gattopardo in Mayfair is seeking a talented Sommelier with strong bartending skills to join our front-of-house team. You will provide expert wine guidance and deliver an exceptional beverage program alongside our luxury dining experience.

As part of a high-energy, fine-dining venue, you will maintain the wine cellar, assist in bar operations, and collaborate with the Head Sommelier and staff to ensure impeccable service and memorable guest experiences.

Qualifications

• Experience as a Sommelier or Bartender in luxury dining or hotel settings.
• Strong knowledge of cocktails, spirits, liqueurs and bar operations.
• Formal wine qualifications (WSET or equivalent) preferred.
• Able to work across wine and bar service with flexibility between roles.
• Excellent communication and teamwork skills.
• Able to work evenings, weekends, holidays in a fine-dining environment.
• Professionalism, attention to detail and high service standards.

Responsibilities

• Provide expert guidance to guests, delivering an exceptional wine service experience that complements our modern Italian cuisine.
• Assist in maintaining the wine cellar, including stock control, storage, and inventory management.
• Support the bar operation when required, demonstrating confident bartending skills and knowledge of cocktails, spirits, and beverage service.
• Prepare and serve cocktails, spirits, aperitifs, and other beverages to the highest service standards when supporting the bar team.
• Collaborate closely with the Head Sommelier, bar team, and front-of-house staff to deliver excellence across the beverage program.
• Enhance guests’ dining experiences through your passion for wine, refined service, bartending ability, and deep product knowledge.

About the Role

Key Criteria

• Have previous experience as aSommelier or Bartender in a similar high-end beverage service rolewithin a luxury restaurant or hotel environment.
• Previous bartending experience is required, with a strong understanding of cocktails, spirits, liqueurs, aperitifs, and general bar operations.
• Demonstrate strong knowledge of Italian wines and global wine regions; formal wine qualifications (WSET or equivalent) are preferred.
• Be confident working across both wine and bar service, with the ability to move between sommelier and bartending responsibilities as required.
• Possess excellent communication and teamwork skills, with confidence in collaborating effectively across restaurant and bar teams.
• Be flexible to work evenings, weekends, and holidays in a fast-paced, fine-dining environment.
• Maintain a high standard of professionalism, attention to detail, and service when working in both the restaurant and bar areas.
