Job summary

Nobu Hotel London Portman Square is seeking a Senior Sushi Chef to lead sushi craftsmanship and deliver Nobu’s renowned dining experience. You will prepare, cut, cook and present sushi to exacting standards, collaborate on Omakase menus, and maintain impeccable station hygiene and teamwork.

We require exceptional knife skills, deep knowledge of Japanese culinary traditions, and a passion for precision and artistry.

Qualifications

• Experience as Sushi Chef in a luxury hospitality or fine dining environment.
• Exceptional knife skills required.
• Deep understanding of Japanese culinary traditions.

Responsibilities

• Prepare, cut, cook and present sushi to Nobu’s exacting standards.
• Set up and operate station efficiently during service.
• Follow recipes to maintain consistency across dishes.
• Create Omakase and tasting menus with Head Sushi Chef.
• Uphold hygiene, safety and sanitation practices at all times.
• Train new team members and foster collaboration.
• Attend team briefings and contribute ideas for improvement.
