Job summary

Search Consultancy is recruiting a Sous Chef for a prestigious 4-star hotel group in Mid Lothian. You will join a senior kitchen team, overseeing operations across restaurant, bar, lounge and events, shaping seasonal menus, managing a brigade of around 10, and ensuring HACCP compliance in a high-volume environment.

The role offers a starting salary around 40k with troncs, live-in accommodation if needed, and a pathway to develop leadership in a busy high-volume setting.

Qualifications

• Proven Senior Chef experience in a busy 4-star hotel.
• Strong banqueting background essential.
• Experience covering multiple outlets in one service.
• Ability to lead and motivate brigade in fast-paced environment.

Responsibilities

• Oversee kitchen operations across restaurant, bar, lounge, room service and events.
• Shape seasonal menus and maintain high standards in a large brigade.
• Control food costs, portions, stock and waste within budget while ensuring HACCP compliance.
