Job summary

Nira Caledonia, part of Shanti Hospitality Limited, is seeking an experienced Restaurant Manager to lead its award-winning dining operation and deliver exceptional guest experiences daily.

You will oversee the restaurant, bar, breakfast and room service, partnering with the Head Chef to drive service excellence, staff development and commercial success in a luxury, Scottish produce–focused setting.

Qualifications

We are looking for an experienced Restaurant Manager to lead their award-winning dining operation, renowned for its focus on quality Scottish produce, impeccable service, and warm hospitality.

The Role

You will oversee the day-to-day operation of the restaurant, bar, breakfast, and room service offerings, ensuring every guest enjoys a first-class experience. Working closely with the Head Chef, you will inspire and develop a high-performing team while driving service excellence and commercial success.

Key Responsibilities

• To manage the day-to-day operation of Blackwoods restaurant, championing a focus on high-quality Scottish produce and delivering an exceptional, tailored guest experience.
• Ensure strict adherence to the Licensing (Scotland) Act 2005.
• Oversee daily F&B operations across Blackwoods, the hotel bar, breakfast service, and room service.
• Curate and manage the restaurant's wine and beverage lists, including our Scottish whisky selection, ensuring staff are fully trained on pairings and recommendations to drive upselling.
