Job summary

The Butchers Recruiter is seeking a skilled butcher for a focused night operation. You’ll handle beef, lamb, pork, poultry and game, preparing bespoke steaks, joints and portioned cuts while upholding high standards of quality.

In a well-equipped production environment you’ll follow HACCP and food safety rules, weigh, pack and label orders, and work with dispatch teams to ensure on-time fulfilment. Staff training and PPE provided.

Qualifications

• Proven multi-species meat preparation and portioning experience.
• Strong knife skills for deboning, trimming and bespoke cuts.
• Knowledge of food hygiene, HACCP and allergen controls.
• Experience in production or larder environment following specifications.

Responsibilities

• Break down, debone, trim and portion beef, lamb, pork, poultry and game to spec.
• Prepare bespoke steaks, joints and specialist cuts with consistent quality.
• Weigh, pack and label products for customer orders.
• Follow HACCP and maintain high food hygiene and safety standards.
• Operate vacuum packers, slicers, bandsaws and wrapping machinery safely.
• Coordinate with picking and dispatch teams to ensure on-time order fulfilment.
