• Assist with stock control, ordering, inventory management, and forecasting production requirements.

• Train, mentor, and develop junior team members, fostering a collaborative environment.

As a Pastry Junior Sous Chef at Mandarin Oriental Mayfair, you will be responsible for:

• Supporting the Head Pastry Chef in the day-to-day operation of the pastry kitchen, ensuring smooth workflow and effective delegation of tasks during service periods.
• Driving the team to maintain the highest levels of productivity, efficiency, and consistency across all pastry preparation and service areas.
• Assisting with stock control, ordering, inventory management, and forecasting production requirements to ensure adequate supplies are available while minimising waste.
• Preparing, producing, and presenting pastry items to the highest standard, ensuring quality, portion control, and presentation guidelines are consistently met.
• Training, mentoring, and developing junior team members, encouraging continuous improvement and maintaining a positive and collaborative working environment.
• Supporting the creation and development of new desserts, seasonal offerings, and menu changes in collaboration with senior chefs.
• Demonstrating the highest standards of food safety and hygiene, with a thorough understanding of HACCP principles, maintaining excellent personal hygiene, and ensuring compliance across the team.

As a Pastry Junior Sous Chef you will be working on a rotating shift basis, Monday to Sunday, 40 hours a week. Shift patterns will vary (including weekends and bank holidays), so flexibility is required where applicable.
