Job summary

Wasabi Sushi & Bento is seeking a Finance Analyst - Operations to join our Finance Team in Park Royal. This analytical role goes beyond standard reporting to uncover drivers of restaurant performance and opportunities to improve profitability and reduce costs.

You will work with Operations to analyse P&L, trading, labour and cost data, providing actionable insights and recommendations, and supporting implementation.

Qualifications

• 4 years in commercial or operational finance analyst role within restaurants or multi-site retail.
• Strong understanding of multi-site P&L economics (labour, food cost, waste).
• Track record of analysis driving decisions or savings, not just reporting.
• Ability to ask why and find root causes.
• Advanced Excel with large datasets.

Responsibilities

• Analyse P&L, trading, labour and cost data to identify opportunities to increase revenue and profitability.
• Benchmark restaurants to identify best practices and value of closing gaps.
• Evaluate labour deployment and testing of rota, labour models and opening hours.
