Job summary

Rudy's Pizza Nottingham is seeking a Head Pizzaiolo to own the kitchen, uphold Neapolitan standards and lead a large kitchen team. The role requires senior kitchen leadership, deep Neapolitan expertise, and a passion for quality and culture.

You will manage prep, service and post-service activities, ensure food safety, and drive efficiency through effective labour planning. This is a full-time, on-site position with a competitive salary and performance bonus.

Qualifications

• Extensive experience as Head Pizzaiolo or Senior Sous in a high-volume kitchen.
• Deep technical knowledge of authentic Neapolitan pizza-making.
• Proven ability to lead, motivate and develop a large kitchen team.
• Strong commercial awareness - labour and waste management.

Responsibilities

• Taking full ownership of kitchen performance, quality, and consistency.
• Leading, developing, and inspiring the kitchen team across all levels.
• Maintaining Rudy's Neapolitan pizza standards to the highest specification.
• Managing kitchen operations end-to-end: prep, service, post-service, and everything in between.
• Ensuring full compliance with food safety & allergen.
• Driving efficiency through effective labour management and scheduling.
• Overseeing stock control & ordering.
• Conducting team reviews, training, and progression planning.
• Working closely with the General Manager to align kitchen and floor performance.
