Job summary

L’ETO is opening a new Berkeley Square bistro in Mayfair and seeks a Bar Manager to lead the venue’s beverage program from day one. You will shape the drinks menu, supervise the bar team and ensure outstanding hospitality during both daytime and evening service.

The role focuses on signature cocktails, wines, spirits and premium service, with pre-opening setup, training, stock control and supplier relationships. Strong leadership, creativity and guest connection are essential for success.

Qualifications

• Proven experience as Head of Bar or Bar Manager in premium venues.
• Strong cocktail knowledge and presentation.
• Solid wine, aperitifs, spirits knowledge and beverage trends.

Responsibilities

• Pre-opening & Launch: support bar setup, recruitment, training and opening.
• Beverage development: contribute to drinks menu with signature cocktails and seasonal specials.
• Wine & Cocktail service: deliver a knowledgeable, engaging evening beverage experience with consistency.
• Bar operations: oversee daily bar prep, service, cleanliness, equipment maintenance and efficiency.
• Team leadership: recruit, train, develop bar team and foster a high-performing environment.
• Stock & supplier management: manage beverage orders, stock rotation, inventory and wastage.
• Guest experience: create welcoming atmosphere and build guest relationships with product knowledge.
• Quality & standards: ensure recipes, presentation and service procedures are followed.
