Job summary

Maki & Ramen in London is seeking an experienced Sushi Chef to lead the launch of this new site. You will prepare and present high-quality sushi and sashimi, applying Japanese techniques and standards during service.

The role requires strong knife skills, HACCP knowledge, and the ability to mentor junior team members. Hours are 45-50 per week, with a negotiable schedule and a competitive hourly rate (£13–£14.50, up to £16 with tips).

Qualifications

• Proven experience as a Sushi Chef in a high-quality, high-volume Japanese restaurant.
• Excellent knife skills including filleting, portioning and sashimi cutting.
• Strong knowledge of Japanese ingredients, sushi rice preparation and traditional techniques.
• In-depth understanding of raw fish handling, HACCP and food safety standards.
• Ability to stay calm, accurate and efficient under pressure while maintaining presentation.

Responsibilities

• Prepare and present high-quality sushi and sashimi to an exceptional standard.
• Carry out advanced knife work, fish butchery and rice preparation in line with Japanese techniques.
• Ensure correct handling, storage and preparation of raw fish in full compliance with food safety regulations.
• Maintain immaculate standards of cleanliness, organisation and mise en place within the sushi section.
• Support the Head Sushi Chef with service leadership, quality control and mentoring of junior team members.
