ESS – Defence, Energy and Government Services is seeking an experienced Sous Chef to lead our catering operation at Kendrew Barracks, Cottesmore. The role involves hands-on kitchen leadership, daily meal preparation and a focus on quality in a fast-paced environment.

You will manage a small team, drive food safety and hygiene standards, and work to budgeted targets while delivering nutritious meals for service personnel. This is a full-time position with a 37.5-hour week and a £30,360 pa salary.

Qualifications

• Proven experience as Sous Chef or Senior Chef.
• Hands-on leader who works with the team in a busy kitchen.
• Strong organisational and communication skills.
• Calm under pressure in high-volume catering environments.

Responsibilities

• Prepare and deliver high-quality meals for service personnel.
• Lead from the front in a hands-on Sous Chef role.
• Manage daily feeding and function activities.
• Motivate and develop the kitchen team.
• Ensure presentation, consistency and service standards.
• Manage food ordering, stock control and minimize waste.
• Maintain high standards of hygiene, cleanliness and safety.
• Assist in budgeting and achieving financial targets.
• Ensure compliance with Food Safety and Health & Safety regulations.
