Job summary

Amazonico London is recruiting a Senior Sous Chef to lead the kitchen brigade at our Mayfair venue, reporting to the Executive Chef. You will drive culinary excellence during every service, mentor junior chefs, and uphold the highest standards of quality and consistency in a fast-paced, luxury dining environment.

You will collaborate on seasonal menus, manage stock and inventories, and maintain rigorous food safety practices while supporting the growth and development of the kitchen team.

Qualifications

• Proven experience as Sous or Senior Sous Chef in premium/high-volume settings.
• Natural leadership skills with calm, hands-on approach.
• Passion for high-quality, creative cuisine.
• Strong attention to detail and ability to work under pressure.

Responsibilities

• Oversee day-to-day kitchen operations and service flow.
• Train, motivate, and support junior team members.
• Uphold portion control, stock rotation, and waste management.
• Ensure compliance with food safety and hygiene standards.
• Maintain mise en place and prep standards across all sections.
• Manage orders, weekly reporting, and stock inventories.
• Collaborate on new dish development and seasonal menus.
• Lead the kitchen in the absence of the Executive Chef.
