Job summary

Gidleigh Park, part of the Andrew Brownsword Hotels group, seeks a Head Pastry Chef to lead the pastry section in a Michelin one-star kitchen on the edge of Dartmoor. You will design menus, manage pastry production, and mentor the team to deliver desserts that reflect the restaurant's culinary vision.

The role combines creative excellence with operational leadership, ensuring quality, consistency, and food safety while maintaining a high standard of guest experience.

Qualifications

• Experience leading a pastry section in a fine dining environment.
• Experience in Viennoiserie and chocolates.
• Ability to mentor and develop pastry staff while maintaining high standards.

Responsibilities

• Lead all pastry operations and service delivery.
• Production and supply of sweets, breads, pastries, and other pastry items.
• Collaborate with senior culinary team on menu development and guest experiences.
• Control food costs, wastage, ordering, and inventory.
• Train employees to perform duties efficiently and effectively.
• Oversee pastry mise en place, hygiene, allergen management, and HACCP compliance.
• Inspire and develop the pastry team to uphold excellence.
