Job summary

Pennyhill Park in Bagshot, Surrey, part of the Exclusive Collection, invites applications for a Junior Sous Chef at Themis Restaurant. You will support the Head Chef, help develop seasonal menus, and ensure dishes are prepared and presented to the highest standards.

Predominantly daytime shifts in our spa dining operation, with summer months and peak trading periods requiring flexibility into the evening. The role offers development within Exclusive Collection and access to staff benefits.

Qualifications

• Experience as Junior Sous Chef or Chef de Partie in a quality hotel or restaurant.
• Strong culinary skills with fresh, seasonal ingredients.
• Experience supervising and developing junior team members.
• Excellent knowledge of food safety and allergen management.

Responsibilities

• Support the Head Chef in the smooth and efficient operation of the Themis kitchen.
• Assist in curating and developing seasonal menus aligned with spa dining concepts.
• Ensure dishes are prepared, presented and served to high standards.
• Lead and motivate the kitchen team in Head Chef's absence.
• Train and develop team members, promoting continuous improvement.
• Maintain standards across the Themis food offering and HACCP procedures.
• Assist with stock control, ordering and waste minimisation.
• Collaborate with front-of-house to deliver an exceptional guest experience.
