Job Title: Lead Chef

As Lead Chef at Norden House, you will be responsible for the operational efficiency of the catering service, planning and preparing food and beverages to the required standard within the budget limitations as agreed with the home management.

Responsibilities
  1. Lead, motivate, and direct a team of kitchen colleagues to deliver a first-class catering service to the residents.
  2. Understand the individual nutritional needs and choices of residents at all times.
  3. Prepare menus in consultation with the Head Chef, residents, families, and catering committees following best practice guidance.
  4. Prepare, cook, and serve meals, ensuring all dietary requirements and personal choices are fully considered.
  5. Manage the catering budget within the agreed limits.
  6. Engage with residents, relatives, visitors, and colleagues to continually improve the quality of life and service.
  7. Note and act upon comments regarding the catering operation.
  8. Prepare beverages and snacks as needed, based on residents’ needs and choices.
  9. Ensure the food served meets nutritional standards.
  10. Maintain compliance with Food Safety Management System and ensure a safe kitchen environment.
  11. Monitor and replenish kitchen and food stocks, maintaining records per company procedures.
  12. Oversee the presentation of dining areas.
  13. Organize special functions outside of normal hours as needed.
  14. Keep stock records up to date.
  15. Supervise kitchen staff and report difficulties to the Head Chef.
  16. Maintain high standards of hygiene, cleanliness, and food safety.
  17. Report equipment defects promptly.
  18. Conduct quarterly staff supervision and personal development plans.
  19. Manage the catering rota, monitor sickness and absence, and authorize holidays.
  20. Maintain regular communication with the Head Chef and senior management.
  21. Attend and hold team meetings as required.
Skills and Experience Required

  • Strong knowledge of food handling and sanitation standards
  • Knowledge of modified diets
  • Food Hygiene Certificate
