OVERVIEW OF ROLE

Head Servers are experts in the food & beverage industry, demonstrating warm hospitality and moving through service with purpose and efficiency. They possess extensive knowledge of our food menus, wines, spirits, cocktails, and hot beverage programs. They also have a solid foundational understanding of the culinary world, including classic cocktails, major grape varieties, and wine regions. Head Servers are responsible for maintaining high levels of food and beverage knowledge among themselves across all outlets, knowing all ingredients, preparations, allergens, and possible modifications for all dishes. They are viewed as leaders and should serve as sources of inspiration and aspiration.

MAIN DUTIES & RESPONSIBILITIES

The main responsibilities of the Head Server include, but are not limited to:

  • Greeting guests warmly, presenting menus, processing orders into Micros, and maintaining high service standards throughout the guest's visit. Knowledge of spirits, ingredients, methods, and presentation of dishes and drinks is essential.
  • Knowing all wines by the glass, discussing major wine regions, climates, terroir, and styles, and making confident recommendations. Responsible for wine service protocols and glass pouring levels. Setting up the floor for service, stocking waiter stations, and maintaining tools needed for service.
  • Explaining and discussing all food and beverage options, understanding traffic patterns, section plans, and team on-site. Collaborating with team members to deliver informed and expert service, championing our food & beverage programs.
  • Managing CGS stocktake and reporting numbers weekly for ordering purposes.
  • Training new servers and cocktail servers.
  • Creating food and cocktail information sheets for staff, including detailed info, photos, allergies, and fun facts.
  • Assisting management with team development activities like line-ups, happy hours, and quizzes.
  • Supporting management with overseeing service and other tasks as needed.
