A busy sushi restaurant in Bath is seeking an experienced Head Sushi Chef to manage the sushi section which constitutes 60% of sales. The ideal candidate should have prior restaurant experience in sushi preparation, good knife skills, and understand hygiene practices. Running the sushi station independently during service hours is a must, along with ensuring high standards of speed and presentation. Bath Sushi (Ryujin Ltd) is a busy independent Japanese & sushi restaurant in central Bath. Most of our orders are Deliveroo / UberEats plus some eat-in and collection. We are looking for an experienced Head Sushi Chef to run our sushi section (sushi is around 60% of sales).
Training / probation rate from £13.00-£14.50 per hour (DOE) for 45-50 hours / week
After a successful paid trial and 3-month probation, strong head chefs who meet our standards (speed, consistency, presentation) can earn up to £16.00 per hour, plus tips
Performance bonus: extra £150 in any week where total restaurant sales are over £10,000, for chefs meeting our speed / quality standards (overall take-home can be around £800 / week in strong weeks, depending on tax)

Family-run, friendly environment, open Tuesday-Sunday (12-3 & 5-10)
Final pay level will depend on your performance in the paid trial shift and during the 3-month probation (quality, speed, consistency).

Bath BA2: reliably commute or be willing to relocate with an employer-provided relocation package (preferred)
