Job summary

The NICI Bournemouth is seeking an experienced Head of Bars to lead all bar operations, shaping guest experiences, beverage quality and service standards across the property.

You will recruit, coach and develop the Bars team, manage budgets and stock, and collaborate with Food & Beverage leadership to create innovative menus and drive revenue while ensuring compliance and exceptional hospitality.

Qualifications

• Proven experience as Head of Bars or senior Bars Manager in luxury hospitality.
• Strong leadership with track record of team development.
• Excellent knowledge of wines, spirits, cocktails and premium beverages.
• Commercially focused with budgeting and profitability experience.
• Outstanding organisational and communication skills.
• Willingness to work evenings, weekends, and bank holidays.

Responsibilities

• Provide strategic leadership for all bar operations across THE NICI Bournemouth.
• Coach and develop the Bars Management team and bartenders.
• Drive service excellence and maintain high standards across bars.
• Develop innovative beverage menus and seasonal cocktail programmes.
• Manage budgets, labour costs, stock control, and gross profit targets.
• Analyse sales performance and implement revenue initiatives.
• Oversee beverage purchasing and stock management.
• Lead recruitment, succession planning and performance management.
• Ensure licensing, health & safety and food safety compliance.
• Collaborate with Restaurant, Events and Kitchen teams for seamless guest experiences.
