Opportunity: Head Chef

We are seeking a Head Chef to oversee two restaurants and 12 chefs at one of London’s oldest institutes. This role offers an exceptional holiday package, including all bank holidays and school holidays off, 6 weeks in summer, and two weeks over Christmas, totaling only 195 working days per year.

Benefits include a 30-day holiday allowance, guaranteed bonuses, tronc, and a 21% pension contribution.

The role involves managing breakfast, lunch, and dinner services, with service capacities of up to 300 for breakfast and 600 for lunch. Dinner service is smaller. Flexibility to work mornings or evenings is expected, with a Monday to Friday schedule.

Responsibilities:
  • Develop and plan 6-week cycle menus considering seasonal changes and themed days.
  • Ensure provision of seasonal, locally sourced, and high-standard food.
  • Produce food timely for smooth service.
  • Manage ingredient sourcing, inventory, and supplier quality issues.
  • Coordinate stock ordering and stocktaking.
  • Manage and develop the kitchen team, including briefings, meetings, and personal development.
  • Uphold standards of food quality, hygiene, and safety in compliance with legal and food safety regulations.
  • Collaborate with senior teams to meet budgetary and service standards.
