Duties
- Responsible for the provision of a safe, efficient and effective catering service in line with the legal and NAAFI standards of food hygiene, quality and presentation as directed by your Executive Chef;
- Responsible for ensuring that effective allocation of duties ensures that meals are prepared, cooked, and displayed to a high standard according to the agreed menu/recipe/ allergenic and nutritional information specifications and that the service of food is prompt;
- Responsible for delivering the highest levels of hygiene and cleanliness throughout all catering facilities, including that of equipment, fittings, furnishings;
- Responsible for the running and smooth operation of the catering provision and facilities across the station and providing support globally for any new catering business;
- Responsible for the supervision and development of employees, ensuring that the standards of Health & Safety, Food Safety, COSHH, adherence to dress policy and the performance expected in their job descriptions are understood and met;
- Responsible for the preparation of shift rosters and ensuring that time sheets and leave records are accurate and employee attendance and time keeping is monitored and managed accordingly;
- Responsible for maintaining high standards within authorised income and allowance, control daily expenditure of messing, by controlling stock and assisting in the ordering of replenishment items and other rations within agreed financial controls;
- Responsible for developing and delivering solutions for any action required to improve standards in consultation with the Line Manager;
- Responsible for preparing function costings and maintaining messing accounts in line with policy and taking part in periodic catering counts across the station;
- Complete relevant bookwork; ensure an accurate and efficient office admin system is in place to provide reports and returns as directed by your manager;
- To undertake any reasonable request within the scope and grade of the role and to carry out other duties as reasonably requested by NAAFI for the needs of the business to enable delivery of service, including taking part in activities in the wider operational part of the business as and when required.
Requirements
- Proven experience as a Head Chef or in a similar leadership role within a restaurant environment.
- Strong knowledge of culinary techniques, food safety regulations, and kitchen management practices.
- Excellent leadership skills with the ability to motivate and inspire a team.
- A passion for hospitality and delivering exceptional dining experiences to guests.
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Strong communication skills for effective collaboration with staff at all levels.
- Flexibility to work various shifts, including evenings, weekends, and holidays as required.
