What you'll be doing as a Head Chef:
- Ensure kitchen operations meet budgeted targets.
- Lead and mentor a team of kitchen staff, including sous chefs, chef de parties, and commis chefs.
- Maintain high standards of food quality and consistency.
- Understand budget construction and influence profit and loss results.
- Maintain control of expenditure at all times.
- Complete and check par stocks of equipment monthly, reporting monetary value to the accountant.
- Assist in budget preparation and control expenditure through vigilant procedures and price negotiation with suppliers.
- Manage kitchen rotas and salaries to meet budgeted payroll forecasts.
- Evaluate performance and product regularly to identify future challenges.
- Ensure effective daily communication with Bistro and Meetings at the hotel.
