Job summary

Fortnum & Mason are seeking an experienced Head Bartender to lead the bar operation at Heathrow Terminal 3. You will oversee daily bar runs, ensure exceptional service, and maintain top product quality while developing the bar team.

Role requires extensive knowledge of cocktails, wines, and spirits, and a passion for delivering luxury hospitality in a fast-paced airport environment. You will act as brand ambassador and deliver memorable guest experiences.

Qualifications

  • Previous experience as a Head Bartender, Senior Bartender, Bar Supervisor, or Assistant Bar Manager within a premium hospitality environment.
  • Strong knowledge of cocktails, wines, spirits, and beverage service.
  • Experience supervising or leading a bar team.
  • Excellent customer service and communication skills.
  • Ability to motivate, coach, and develop team members.

Responsibilities

  • Lead and supervise the bar team, ensuring exceptional guest service at all times.
  • Prepare and serve alcoholic and non-alcoholic beverages to the highest standards.
  • Ensure consistency in drink presentation, quality, and service.
  • Train, coach, and support bartenders to develop their skills and product knowledge.
  • Create a welcoming and engaging atmosphere for guests.
  • Manage bar stock levels, ordering, inventory control, and minimise wastage.
  • Monitor compliance with alcohol licensing laws and age-verification procedures.
  • Ensure Health & Safety, Food Safety, and company policies are followed.
  • Handle guest enquiries, complaints, and feedback professionally and efficiently.
  • Support management in driving sales and achieving commercial targets.

Fortnum & Mason are looking for an experienced and passionate Head Bartender to lead our bar operation at Heathrow Terminal 3.

As Head Bartender, you will be responsible for overseeing the daily running of the bar, ensuring exceptional service standards, maintaining product quality, and supporting the development of the bar team. You will lead by example, creating memorable guest experiences while demonstrating extensive knowledge of beverages, cocktails, wines, and spirits.

Key Responsibilities
  • Lead and supervise the bar team, ensuring exceptional guest service at all times
  • Prepare and serve alcoholic and non-alcoholic beverages to the highest standards
  • Ensure consistency in drink presentation, quality, and service
  • Train, coach, and support bartenders to develop their skills and product knowledge
  • Create a welcoming and engaging atmosphere for guests
  • Manage bar stock levels, ordering, inventory control, and minimise wastage
  • Ensure the bar area remains clean, organised, fully stocked, and visually appealing
  • Monitor compliance with alcohol licensing laws and age-verification procedures
  • Ensure all Health & Safety, Food Safety, and company policies are followed
  • Handle guest enquiries, complaints, and feedback professionally and efficiently
  • Support management in driving sales and achieving commercial targets
  • Develop and maintain extensive knowledge of wines, spirits, cocktails, beers, and Fortnum & Mason products
  • Work collaboratively with front-of-house, kitchen, and management teams to ensure smooth operations
  • Act as a role model and brand ambassador for Fortnum & Mason at all times

Skills & Experience
  • Previous experience as a Head Bartender, Senior Bartender, Bar Supervisor, or Assistant Bar Manager within a premium hospitality environment
  • Strong knowledge of cocktails, wines, spirits, and beverage service
  • Experience supervising or leading a bar team
  • Excellent customer service and communication skills
  • Ability to motivate, coach, and develop team members
  • Strong organisational and time-management skills
  • Experience managing stock, ordering, and inventory controls
  • Ability to perform effectively under pressure in a busy environment
  • Commercial awareness with a focus on driving sales and guest satisfaction
  • Excellent attention to detail and commitment to maintaining high standards
  • Flexible approach to working hours, including evenings, weekends, and airport operational requirements
