Job summary

Zanna Group in Manchester is seeking an experienced Head Baker to lead our bakery team and produce exceptional pastries that delight customers every day. You will oversee all bakery production, uphold high quality and efficiency, and inspire a passionate group of bakers.

Responsibilities include directing daily production of cookies, doughnuts and pastries, training staff, managing schedules and waste, ensuring food safety and HACCP compliance, and driving continuous improvements in product

Qualifications

• Proven experience as a head baker or senior baker.
• Strong leadership skills and ability to inspire a diverse production team.
• Deep technical knowledge of baking techniques, dough handling, fillings, glazing and finishing methods.
• Excellent understanding of food safety standards, HACCP and allergen controls.
• Ability to manage production planning, stock control and supplier relationships effectively.

Responsibilities

• Lead the daily production of our full bakery range, specialising in cookies, doughnuts, and pastries, ensuring quality and presentation standards.
• Manage, train and develop the bakery team to deliver consistently excellent results.
• Oversee production schedules, ensure efficient workflows to meet demand and minimise waste.
• Maintain compliance with food safety, hygiene and health & safety regulations.
• Manage ingredient inventory and supplier relationships to ensure fresh, high-quality materials.
• Monitor equipment maintenance and ensure safe and efficient bakery operations.
• Contribute to continuous improvement initiatives to enhance productivity and product quality.
