Job summary

GAIL’s Bread is seeking a Head Baker to lead and develop our kitchen team across multiple bakeries in Greater London. You’ll manage day-to-day baking, ensure products meet our high standards, and train staff to maintain food safety and quality.

The role requires hands-on leadership and a passion for delivering fresh bread and cakes with consistency. Early starts are part of the routine, with shifts around 5:30am–6:30am depending on bakery.

Qualifications

• Experience leading a bakery/kitchen team is desirable.
• Ability to train staff to maintain high standards and food safety.

Responsibilities

• Prove and bake items for displays, ensuring knowledge of products and recipes.
• Lead and develop the bakery team to deliver high-quality bread and cakes.
• Maintain food safety standards and clean as you go while meeting targets.

We are looking for Head Bakers who have a passion to join the GAIL’s family and for training and developing others. You should be motivated by taking charge and want to be a positive role model. With no day being the same, you must be organised and clear talking to maximise your teams’ potential and to deliver our fresh food, bread and cakes to high standards whilst maintaining food safety standards.

You will be proving and baking items for our beautifully presented displays and know our products and recipes inside out.

Our bakeries open early so typically Kitchen Team Members will start early too – it will vary between bakeries but typically around 5:30am – 6:30am
