Job summary

Mitchells & Butlers is seeking a Product Manager AI on a 6-month fixed-term contract to lead discovery and investment definition for a new enterprise AI capability. You will work with Enterprise AI Solution Architect, Engineering, Data and Cyber Security to prioritise use cases, define outcomes and ownership, and shape the business case.

The role is hybrid with travel to head offices, brand sites and partner locations as needed.

Qualifications

• Experience managing enterprise platform, data, integration or AI-enabled products is essential.
• Strong product discovery, use-case prioritisation, stakeholder management and business-case skills.
• Good working understanding of generative AI, LLMs, AI assistants and agent-based systems; familiarity with MCP/RAG enterprise AI platforms is desirable.

Responsibilities

• Identify and prioritise high-value supplier, guest and colleague use cases using measurables and strategic alignment.
• Define business outcomes, value measures and acceptance criteria.
• Identify data, APIs, systems and workflows needed; collaborate with Architecture and Data teams.
• Define governance, ownership, decision rights and privacy requirements with specialists.
• Lead build/buy/partner assessment for enterprise AI platforms.
• Define proof-of-concept hypotheses and success criteria for priority use cases.
• Own product roadmap and mix with Architecture and Engineering for phased rollout.
