- Organising and supervising the unit in accordance with standards, contract specifications, and regulations
- Managing resources efficiently, including stock, staff, and assets
- Overseeing food preparation, cooking, and service to meet standards

- Ensuring delivery of client hospitality standards and seeking feedback
- Innovating and varying the menu to avoid repetition
- Operating within budget, monitoring trends, and implementing corrective actions
- Meeting customer expectations
