Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at the age of 26. At launch, Tom’s unique approach garnered significant critical acclaim, with the restaurant awarded its first Michelin Star just five months after opening and a second star following in 2021.
Tom learned his craft from some of the world’s most influential Chefs, spending time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.
In 2023, Tom opened Story Cellar, a Parisian-inspired rotisserie-style restaurant in Covent Garden, followed by Dovetale at 1 Hotel Mayfair, where he created a sustainably minded, produce-led menu of reimagined European classics.
Continuing to evolve his restaurant portfolio, 2026 saw the opening of two significant new projects. MOR opened in Cornwall in partnership with Carbis Bay Estate, set above one of Britain’s most beautiful white-sand beaches. Drawing inspiration from its coastal surroundings, MOR brings Tom’s signature storytelling and ingredient-led approach to exceptional Cornish produce, creating a restaurant shaped by the point where land and sea meet.
The Penn also opened at Stoke Park in Buckinghamshire in 2026, marking an exciting new chapter for the historic estate. The restaurant brings Tom’s distinctive approach to modern British dining to Stoke Park, combining exceptional produce, considered cooking and warm, refined hospitality within one of the UK’s most iconic country estates.
