Job description

You embody craftsmanship, quality, and a standard of quiet excellence - while treating every service as an opportunity to look after guests and teammates alike. You take ownership of your section with pride, precision, and creativity - shaping dishes that tell a story - while nurturing a calm, collaborative environment behind the scenes.

Just as the Castle offers guests a sense of warmth, elegance, and effortless comfort, you bring that same spirit into the kitchen. Guiding junior chefs with generosity, contributing to a culinary experience that feels personal, memorable, and unmistakably Taymouth.

Our ethos is simple, from seasonality and Scottish provenance to mindful sourcing, foraging, and sustainable practices. We take our craft seriously, but not ourselves. You'll help build a spirited, supportive team culture where high standards and good humour go hand in hand. Thriving in a close-knit, high-performing team - your ambitious, skilled, and thoughtful, with the desire to grow into future leadership. You bring discipline, creativity, and a genuine love for cooking beautiful food.

Discover the role

Lead your section with confidence, pride and precision, preparing, cooking and presenting dishes to the highest standards. Maintain impeccable mise en place and ensure your area is organised, clean and service ready.

Work closely with senior chefs on menu development, championing exceptional local produce and Scottish heritage. Taste test and refine dishes while maintaining consistent quality, presentation and temperature standards. Minimise waste and support our commitment to sustainability.

Support and develop junior chefs through positive leadership, knowledge-sharing and constructive feedback. Help create a kitchen culture that is respectful, collaborative, energetic and, importantly, fun.

Maintain the immaculate standards synonymous with Taymouth Castle, ensuring excellent hygiene, food safety, housekeeping, health & safety and back-of-house presentation in line with luxury hospitality standards. Monitor stock levels, rotation and waste; assist with inventory, ordering and receiving luxury food and beverage deliveries, ensuring product quality is maintained at all time

Work flexibly as part of a team, responding positively to the demands of service and changing business needs. Take pride in attention to detail and contribute to memorable experiences for our guests.
