Job summary

Mitchells & Butler s is seeking an experienced Food Procurement Manager to own the beef category across 1,600+ sites, delivering value, quality and sustainability. You will lead strategic sourcing, manage supplier relationships and collaborate with cross-functional teams to shape the guest dining experience.

The role requires strong negotiation, market insight and autonomous working style, with travel to Midlands and nationwide supplier visits.

Qualifications

• Proven food procurement experience within hospitality, foodservice or retail.
• Strong expertise within the beef category, including supply chains, specifications and sourcing practices.
• Excellent negotiation and commercial influencing skills.
• Ability to analyse market data, spend trends and supplier performance metrics.

Responsibilities

• Lead procurement activity for the beef category across 1,600+ sites.
• Develop and deliver strategic category plans to drive cost efficiency and quality.
• Monitor livestock markets and market dynamics to identify risks and opportunities.
• Build risk mitigation strategies to ensure continuity of supply.
• Lead sourcing and tender projects from strategy through implementation.
• Negotiate sustainable, commercially advantageous agreements.
• Build strong supplier partnerships to drive innovation and improvement.
• Manage supplier performance against specifications and service standards.
• Support sustainability commitments through supplier initiatives.
• Collaborate with Food Development teams to source and develop guest-facing products.
• Influence internal stakeholders and drive positive procurement decisions.
