Assistant Manager – The Cocktail Bar

We are looking for an experienced Assistant Manager to help lead our team at The Cocktail Bar, Belfast. As leaders in hospitality, we pride ourselves on providing the best service in the industry, and we’re seeking the best in the business to help us continue setting the standard. At The Merchant Hotel, you’ll be part of a dynamic, forward-thinking team with opportunities to take your career to the next level.

As Assistant Bar Manager you will oversee an exceptional bar team that will provide an extensive drinks service. You will of course be passionate about service, with an exceptional working knowledge of bar operations and the order of service; along with a deep appreciation of quality wines, champagne and spirts in order to expertly train and develop our bar team, and enhance their guest experience skills.

You will have a hands on approach to service, to prep, create, and mix a range of signature cocktails in addition to mixing and blending of all the classics. Your knowledge of the latest trends in the cocktail bar scene and team trainings will also add expertise and a touch of personality and theatre to our guest's experience.

As Asst. Bar Manager there are a number of additional duties you will undertake including; financials, admin. recruitment, learning and development, and implementing Health & Safety policies and compliance practices.

Finally, you will be a host, making our guests feel welcome whilst they visit The Cocktail Bar and our energetic and vibrant city; so you will need to be highly social, upbeat and friendly; confident and can handle pressure well; thrive in a busy high volume, high energy environment and can manage multiple tasks and guest with ease.

Essential Criteria:

• Proficient in stock management budgeting, P&L control, and venue marketing
• Be willing and able to work flexible hours
• Be willing and able to work long, full-time hours
• All applicants must have Previous Experience and Great Customer Service Skills.
• A high level of service standards
• Operational Delivery
• Good communication Structure
• Experience managing food/drink
• Guest obsessed, always aiming to exceed customer expectations
• Must keep workplace clean and tidy
• Ability to work well under pressure in a fast paced environment

Desirable Criteria:

• At least 2 years’ experience in a people management position
• Must have a want to push marketing and advertising
• Committed to training and developing a team
• An outgoing and friendly personality
• Classic cocktail knowledge
• Irish Whiskey knowledge
