Job summary

Kudu Marylebone is seeking an Assistant General Manager to join its leadership team in London. You will lead from the floor, balance hands-on leadership with commercial acumen, and ensure a refined yet energetic dining experience for guests.

Reporting to the General Manager, you will own daily operations, drive KPIs, manage labour costs, recruit and develop a large team, and uphold the highest standards of service, safety, and guest satisfaction across all services.

Qualifications

• Proven experience leading premium, high-volume restaurant teams.
• Strong understanding of labour control and rota planning.
• Commercially aware with ability to drive revenue and guest spend.
• Excellent communication and people-management skills.

Responsibilities

• Lead service with presence and confidence, setting the tone on the floor.
• Ensure a seamless guest journey from arrival to departure.
• Maintain high standards across food, beverage, and environment.
• Balance labour costs with service quality and efficiency.
