Key Responsibilities

• Craft traditional sushi (maki, nigiri, sashimi) and assemble custom, visually appealing poke bowls.
• Fillet, debone, and precisely slice fresh fish (especially salmon and tuna) and manage vegetable prep and rice seasoning.
• Mix custom poke marinades, dressings, and signature sushi sauces.
• Maintain immaculate station cleanliness in strict accordance with Finnish food safety rules.
• Manage daily inventory of perishable fish, seafood, and produce to minimize kitchen waste.

Requirements

• Proven track record working as a sushi chef or managing a fast‑casual poke station.
• Advanced knife skills in fish handling, slicing precision, and quick assembly.
• Exceptional ability to handle high pressure and stay organized during peak lunch and dinner rushes.
• Fluent English is required; conversational or fluent Finnish language skills are a strong advantage.
• Valid Finnish Hygiene Passport (or commitment to pass test upon hire).
• Valid right to work in Finland or the EU.
