On behalf of our confidential client, Meridia Recruitment Solutions is currently recruiting for an experienced Sous Chef to join a well-established hospitality operation in Fredericton, New Brunswick.

Reporting to the Executive Chef and working closely with Kitchen Leadership, the Sous Chef will play a key role in the day-to‑day success of a high‑volume restaurant operation. This position offers an opportunity to mentor and develop junior kitchen staff, support culinary execution, and contribute to the continued growth of a respected food service operation. For an ambitious culinary professional, this role also presents the opportunity to grow into increasingly senior leadership responsibilities over time.

Responsibilities
  • Assist in overseeing daily kitchen operations and service execution.
  • Lead, coach, and mentor line cooks and junior kitchen staff.
  • Ensure food quality, consistency, presentation, and portion control standards are maintained.
  • Support food preparation, cooking, and service during peak operating periods.
  • Coordinate kitchen workflow and assist in directing service flow.
  • Foster a positive, respectful workplace culture built on teamwork and communication.
  • Ensure compliance with food safety, sanitation, and workplace health and safety standards.
  • Train team members on recipes, preparation techniques, and operational standards.
  • Maintain inventory controls, food storage standards, and product rotation procedures.
  • Assist with kitchen administration functions including ordering, inventory management, scheduling, and cost control as responsibilities evolve.
  • Support opening and closing procedures and ensure proper kitchen organization and cleanliness.
  • Collaborate effectively with front‑of‑house leadership to deliver an exceptional guest experience.
  • Participate in menu development initiatives and continuous operational improvements.

Requirements
  • 3‑5 years of culinary experience in a restaurant, hospitality, or food service environment.
  • Previous experience working under an experienced Chef or kitchen leader.
  • Experience supervising or mentoring kitchen staff.
  • Strong understanding of kitchen operations, food preparation, and service execution.
  • Demonstrated ability to remain organized and effective in a high‑volume environment.
  • Excellent communication and leadership skills.
  • Red Seal certification or equivalent culinary training is considered an asset.
  • Experience with food costing, inventory management, and ordering processes is considered an asset.
  • Strong commitment to food safety and sanitation standards.
  • Ability to read, write, and communicate effectively in English.
Working Conditions
  • Full‑time position averaging approximately 40‑44 hours per week.
  • Primarily evening shifts with leadership responsibilities during closing operations.
  • Restaurant operates seven days per week.
  • Typically two scheduled days off per week.
  • No late‑night service, with operating hours concluding by approximately 10:00 PM.
  • Ability to stand for extended periods and lift up to 40 lbs as required.
