Overview
The Second Cook is responsible for assisting in preparing all meals and ensuring the kitchen and dining areas are clean and sanitary at all times. They must work efficiently, diligently, and maintain consistency while being receptive to direction.
Responsibilities
- Work under supervision in various culinary areas including banquets, garde manger, or bakeshop.
- Prepare food of consistent quality following recipes.
- Possess excellent knife skills, capable of differentiating and cutting various vegetables (chopping, brunoise, dicing, julienne).
- Perform basic breakfast prep such as tray assembly for bacon, sausage, pastries, muffins, and preparing waffle and pancake batter.
- Peel and cut fruits for buffets and banquets.
- Control food waste and monitor par levels for the shift.
- Assist in same-day prep and advance prep for the next day.
- Note out-of-stock items or potential shortages.
- Assist with banquet preparations, including making sandwiches, condiments, plating, salads, and condiments for buffets and events.
- Support carving, omelet, or pasta stations.
- Prepare simple starches and pasta for banquets, cafeteria, and dining room.
- Stock dry goods, maintain refrigerator and freezer cleanliness.
- Return unused food items to storage, covering and dating perishables.
- Follow all health and safety regulations to ensure workplace safety.
- Perform other duties as assigned.
Qualifications
- High school diploma preferred.
- At least 18 months of experience in a fully operational kitchen.
- Culinary post-secondary education is an asset.
- Food Safety Certification is an asset.
- Ability to handle stress in a fast-paced environment.
- Strong organizational and communication skills.
- Team player with attention to detail.
- Flexibility to work shifts, nights, weekends, and holidays.
