About The Opportunity

The Second Cook is responsible for preparing and assisting in producing food items such as à la carte, buffets, banquets, etc., according to the standards set by the Head Chef and Food & Beverage department. The Second Cook must be flexible, open-minded, and willing to assist in food production across the kitchen (galley) operation at any time. The goal is to ensure high food quality, value, consistency, and guest satisfaction.

Essential Duties & Responsibilities
- Operate the station, serve, and prepare products according to specifications in an organized and clean manner as directed by the Head Chef or designate.
- Prepare banquet food in accordance with quality, quantity, taste, and presentation standards.
- Handle food preparation, service, and cleaning procedures for assigned menu items and equipment.
- Maintain cleanliness and sanitation of work areas.
- Carry out delegated production tasks.
- Prepare and cook meats, fish, vegetables, and starches; prepare soups.
- Heat, taste, and adjust seasonings of staff food as required.
- Ensure proper issuance of food with appropriate documentation and authorization.
- Coordinate with other departments to plan and produce food.
- Keep mise-en-place updated before days off.
- Manage food quality, storage, rotation, and inventory levels.
- Assist in controlling food costs through proper storage and use of leftovers.
- Maintain a safe and clean workstation, including cleaning equipment and refrigerators.
- Communicate deficiencies or discrepancies to supervisors.
- Monitor product specifications and quality during storage.
- Expand culinary skills by gaining experience across stations.
- Develop personal culinary style within company standards.
- Learn from First Cook tasks and responsibilities for potential promotion.
- Participate in requisitioning, receiving, and storing products; inquire about unknown items.
- Proactively upgrade professional skills and participate in all kitchen activities.
- Follow health regulations and food safety standards.
- Comply with all company, health, and Transport Canada regulations.
- Participate in pre- and post-shift meetings.
- Maintain grooming and uniform standards.
- Assist with inventories and ordering as needed.
- Ensure high standards of food presentation and passenger satisfaction.
- Accept ongoing training and share best practices with team members.
- Provide input for menu, cost, and equipment improvements.
- Ensure all plating and buffets are well presented.
- Execute food requests promptly and to passenger satisfaction.
- Prioritize quality, production, and timely duties completion.
- Be punctual for scheduled work hours.
- Perform other duties as assigned.
Requirements & Qualifications
- O.S.S.D. or equivalent recognized by the Ministry of Education.
- Minimum two years of kitchen experience.
- Food Handler’s Certificate.
- Hospitality or Culinary degree is an asset.
- Energetic, enthusiastic personality.
- Ability to follow directions closely.
- Effective communication skills.
- Service-oriented attitude.
- Ability to work long periods standing, in warm environments, and lift up to 40 lbs.
- Availability for weekends, evenings, and holidays.
