Job summary

Fairmont Hotel Vancouver is seeking a Seasonal Pastry Cook II to join its renowned pastry team in downtown Vancouver. This world-class luxury hotel offers a October 2026–April 2027 seasonal assignment with a starting wage of 26.82 CAD/hour, rising to 33.53 CAD/hour after probation.

You will prepare, bake and plate pastry items, maintain mise en place, assist with banquets and room service, ensure food safety, label and rotate stock, and work closely with pastry and culinary colleagues to deliver

Qualifications

  • Seasonal full-time assignment (October 2026 – April 2027).
  • Experience in pastry, baking or culinary in high-volume/hotel settings preferred.
  • Knowledge of pastry preparation and bakery techniques.
  • FoodSafe Level 1 certification required.

Responsibilities

  • Prepare, bake, finish and present pastry and desserts per recipes and standards.
  • Complete daily mise en place and maintain an organized workstation.
  • Support pastry prep for à la carte, banquets, buffets and other hotel operations.
  • Maintain quality, portions, freshness, temperature and presentation.

What You’ll Be Doing
  • Prepare, bake, finish and present pastry and dessert items according to established recipes, specifications and presentation standards
  • Complete daily mise en place and maintain an organized and well-prepared workstation
  • Support the preparation of pastry items for à la carte service, banquets, buffets and other hotel operations
  • Maintain consistency in quality, portioning, freshness, temperature and presentation
  • Follow established food safety, sanitation and allergen-handling procedures
  • Properly label, date, store and rotate products to maintain freshness and minimize waste
  • Monitor stock levels within the assigned work area and communicate shortages or supply requirements to the appropriate culinary leader
  • Maintain a clean, safe and organized workstation, equipment and storage areas
  • Report equipment concerns, maintenance requirements, product shortages or quality issues promptly
  • Work collaboratively with Pastry and Culinary colleagues to support efficient service and smooth kitchen operations
  • Follow all hotel policies, departmental procedures, health and safety requirements, Collective Agreement provisions and Fairmont service standards
  • Participate in required training and development activities
  • Perform other duties reasonably assigned that are consistent with the nature and scope of the position
Qualifications
What We’re Looking For
  • Full availability for the duration of the seasonal assignment
  • Previous professional pastry, baking or culinary experience, preferably within a hotel, restaurant, banquet or similarly high-volume environment
  • Strong knowledge of pastry preparation, baking techniques and kitchen practices
  • FoodSafe Level 1 certification
  • Culinary or Baking & Pastry education is an asset
  • Red Seal certification or progress toward Red Seal certification is preferred
  • Strong attention to detail with a commitment to quality, consistency and presentation
  • Ability to organize and prioritize work effectively in a fast-paced kitchen environment
  • Strong communication and interpersonal skills with the ability to work collaboratively as part of a team
  • Reliable, responsible and able to maintain composure during high-volume periods
  • Flexible availability to work a variety of shifts, including mornings, evenings, weekends and statutory holidays
Physical Requirements
  • Ability to stand and walk for extended periods throughout the shift
  • Ability to regularly lift and carry items weighing up to 23 kg (50 lb), using appropriate equipment or assistance where required and following safe handling procedures
  • Ability to bend, reach, kneel, push and pull as required in the performance of duties
  • Ability to work in kitchen environments that may include exposure to heat, steam, cold temperatures and sharp equipment
  • Ability to safely perform the physical requirements associated with food preparation, storage and kitchen operations
