Job summary

Hyatt Regency Calgary is seeking a Pastry Cook 3 – Lead Cook to join our culinary team. You will lead pastry production across outlets, mentor junior members, and ensure food quality and Hyatt standards.

Ideal candidates have at least three years of pastry experience in hotels or restaurants, a culinary degree or equivalent, and strong leadership and communication skills. This role requires valid Canada work authorization and offers a dynamic, collaborative kitchen environment.

Qualifications

  • Minimum of three years of professional pastry experience in a restaurant, hotel, or resort environment; leadership or supervisory experience is an asset.
  • Culinary degree preferred, or equivalent hands-on experience in a professional kitchen.
  • Demonstrated expertise in safely and efficiently operating a broad range of commercial kitchen equipment.
  • Strong communication, organizational, and leadership skills with the ability to motivate and mentor team members.
  • Collaborative, engaged team player with a strong commitment to continuous professional growth and career development.

Responsibilities

  • Oversee pastry production and lead prep for all menu items across kitchen outlets.
  • Review recipes, prep ingredients, cook, plate, and maintain Hyatt culinary standards.
  • Support the Pastry Chef de Partie in daily operations, menu development, and mentoring junior staff.
  • Supervise the culinary team during service, ensuring smooth workflow and high cleanliness standards.
  • Ensure HACCP compliance, proper food handling, sanitation, labeling and rotation of ingredients.

WHAT IS EXPeCTED OF ME IN THIS ROLE?
  • Genuine passion for culinary excellence, demonstrated through leadership, creativity, and a strong commitment to quality and consistency.
  • Responsible for preparation and product of all menu items across assigned kitchen outlets, ensuring food quality, presentation, and consistency.
  • Execute consistent, high-quality food production by reviewing recipes, preparing ingredients, cooking, plating, and following Hyatt culinary standards, and specifications
  • Support the Pastry Chef de Partie in daily kitchen operations, menu development, specials, training, and mentoring junior culinary members.
  • Assist in Supervising and coordinating the culinary team during service, ensuring efficient workflow and maintaining high standards of cleanliness, organization, and professionalism.
  • Ensure full compliance with food-safety standards, including proper food handling, sanitation, temperature control, HACCP documentation, and accurate storage, labeling, and rotation of all food items.
  • Actively contribute as a collaborative leader, supporting the department in achieving operational goals while fostering a positive and professional work, environment.
  • Maintain flexible availability to support departmental scheduling and business demands.
  • Possess valid work authorization for Canada.
EXPERIENCE
