The Head Staff Cook is responsible for preparing and cooking 70-90 staff meals daily during the operational season, while managing a team of three staff members. The role involves maintaining an organized, clean, and efficient kitchen, along with completing various administrative duties.
During the non-operational season, the Head Staff Cook prepares 10-30 staff meals daily, working independently, while ensuring the kitchen remains organized, clean, and functional. Administrative responsibilities continue during this period.
Job Duties
- Set expectations and hold the team accountable for demonstrating desired service behaviors in accordance with Relais and Chateaux standards.
- Receive, clean, and store all products arriving from the dock following the chef’s standards.
- Ensure all daily and weekly cleaning tasks are completed to standard.
- Maintain workstations to the chef’s standards.
- Prepare scratch-made lunches and dinners daily, including vegetarian options and special dietary needs.
- Provide snacks and a sandwich bar for staff between mealtimes.
- Assist the Executive Chef with scheduling, ordering, and receiving products.
- Help clean and scrub the entire kitchen at the end of each service day.
- Maintain effective working relationships and clear communication with colleagues and departments.
- Complete selected daily administrative duties.
Qualifications
- Legally eligible to work in Canada.
- Fluent in English; second language is an asset.
- First Aid certification is an asset.
- Current Food Safe Certificate.
- Culinary Arts Levels 1, 2, or 3.
- Red Seal certification is an asset.
- Minimum of three years of cooking experience; experience in a live-in resort preferred.
- At least one year of supervisory experience required.
