Job summary

Aramark in Fredericton, NB is seeking an Executive Chef to lead our culinary operations at St. Thomas University.

The role oversees student, faculty and visitor food service and catering, ensuring quality and consistency across all stations and events. You will develop menus, manage a brigade, plan budgets, and drive food safety and sanitation standards while delivering on Aramark’s commitment to growth opportunities and a positive student experience.

Qualifications

  • Culinary degree or diploma in culinary arts or hospitality training required.
  • Minimum 3–5 years of culinary management experience.
  • Experience managing a unionized staff is a definite asset.
  • Advanced knowledge of food principles and practices; strong communication skills.

Job Responsibilities
  • Responsible for culinary production of our proprietary healthy, hot, and cold stations
  • Select and develop recipes as well as standardize production recipes to ensure consistence
  • Manage a Sous Chef and brigade of cooks ensuring operational procedures are followed
  • Oversee weekly menu planning from new or formulated recipes in our PRIMA database
  • Prepare and execute campus caterings for faculty, students and guests as required
  • Establish presentation techniques and quality standards, plan and price menus
  • Estimate food consumption and remain within budget for food and labour costs
  • Conduct inventory, place orders, receive deliveries; reconcile orders as required
  • Train, manage and direct kitchen staff; coordinate all culinary related activities
  • Ensure proper equipment operation and maintenance; ensure proper safety and sanitation

Qualifications
  • Culinary degree of diploma and hospitality training is required
  • Minimum 3-5 5 years culinary management experience is required
  • Previous experience managing a unionized staff is a definite asset
  • Advanced knowledge of the principles and practices within the food profession

The pay range for this position is $65,000.00 - $70,000.00.
