Red Shores Race Track & Casino in Charlottetown, PEI, is seeking an Executive Chef to lead a top-tier kitchen, drive culinary excellence, and inspire a high-performing team. Reporting to the Food & Beverage manager, you will oversee multiple foodservice operations and elevate every dish.

Qualifications

  • Diploma from recognized Culinary School or equivalent working experience.
  • Red Seal Journeyman's Trade Designation.
  • Minimum of 5 years of supervisory experience in a related field.
  • Strong organizational, interpersonal, analytical and communication skills.
  • Proficient in computer software and mathematical skills.
  • Ability to thrive in a physically demanding environment and troubleshoot kitchen equipment.
  • Familiarity with WHMIS and Health & Safety standards.
  • Experience operating and maintaining large kitchens with current equipment.

Responsibilities

  • Supervise and oversee multiple foodservice operations.
  • Recruit, train, supervise and mentor a diverse kitchen team to deliver exceptional results.
  • Ensure guest experiences through coaching and a positive culture while upholding standards.
  • Maintain quality control and address guest feedback to improve food and service.
  • Implement OHSA and HACCP standards for safe handling and prep.
  • Manage food and labor costs, inventory, and staffing efficiency.
  • Collaborate on menu development to enhance customer satisfaction and revenue.
  • Oversee events, banquets, and related functions to ensure flawless execution.
  • Innovate and execute menu items keeping up with culinary trends.

Position Overview

Are you a culinary trailblazer ready to lead the charge in a top-tier kitchen? We're looking for an Executive Chef with a bold vision and passion for crafting extraordinary dining experiences. Reporting to the Food & Beverage manager, you'll oversee multiple food service operations at Red Shores. As the driving force behind our vibrant kitchen, you'll bring your creative energy, leadership, and expertise to elevate every dish and inspire a thriving team culture.

Consideration will be given to an equivalent combination of experience, training, and education. The salary for this position is commensurate with experience and qualifications but starts at CAD 70,000. Red Shores is committed to creating a diverse and inclusive workplace. Qualifications

  • Ability to operate and maintain one of the largest kitchens on Prince Edward Island featuring state of the art kitchen equipment.
  • Flexibility to workdays, nights, and weekends.
  • In-depth knowledge of culinary techniques and hygiene standards - complete familiarity with WHMI program guidelines and Health and safety standards
Responsibilities
  • Supervise and oversee a multiple foodservice operation.
  • Recruit, train, supervise, and mentor a diverse, high performing kitchen team to deliver accurate and exceptional results while maintaining Red Shores quality standards
  • Ensure team members provide a memorable guest experience through coaching and fostering a positive working culture by reinforcing Red Shores Operating Principles and performance standards.
  • Maintain rigorous quality control and address guest feedback to enhance food quality and service.
  • Implement and uphold OHSA and HACCP standards for safe food handling and preparation.
  • Manage food and labor costs, oversee inventory control, and ensure staffing levels are efficient and effective
  • Collaborate with the Food & Beverage Manager on strategic planning and menu development to enhance customer satisfaction, drive revenue and enhance our reputation for exceptional customer service with excellent food quality and value.
  • Collaborate with Food & Beverage Manager and Events Lead to oversee events, banquets, and other food-related functions to ensure flawless execution.
  • Innovate and execute menu items, keeping up with culinary trends
