An opportunity to define Italian dining in Calgary. Bonterra Trattoria and Posto Pizzeria are looking for a passionate, experienced, and driven Head Chef to lead the culinary vision for two of Calgary’s most respected Italian-inspired restaurants.
This is more than a kitchen job; it’s a chance to take ownership of two unique culinary identities under one umbrella:
- Bonterra Trattoria – a timeless, rustic Italian experience with modern finesse, focused on seasonality, local ingredients, and house-crafted pasta.
- Posto Pizzeria – a bold and intimate spot known for innovative pizzas, playful share plates, and a chef-driven attitude.
We’re looking for a leader who will build a strong brigade, elevate execution, and tell a powerful food story—someone who can develop people, push creative boundaries, and manage with precision and pride.
What You’ll Lead & Create
- Menu Development & Culinary Identity: Oversee the full menu vision for both restaurants, including seasonal changes, feature development, and event menus. Design dishes that celebrate authentic Italian flavors and modern techniques. Champion local producers and create menus that evolve with the seasons.
- Kitchen Leadership & Operations: Lead, train, and inspire a team of sous chefs, line cooks, and prep staff. Build and maintain systems for prep, quality control, health & safety, and cleanliness. Monitor labor schedules, food costs, and waste management. Foster a positive, respectful kitchen culture rooted in growth, collaboration, and accountability.
- Strategic & Creative Collaboration: Work closely with ownership and front-of-house leadership to create memorable guest experiences. Participate in culinary events, menu launches, wine dinners, and unique dining experiences. Contribute ideas for promotions, marketing, and team engagement.
Who You Are
- 5+ years in a Head Chef or Executive Sous Chef role
- Passionate about Italian cuisine—from handmade pasta to wood-fired pizza and regional specialties
- A true leader with a hands-on, ‘lead by example’ style
- Obsessed with quality, consistency, and building scalable systems
- Comfortable with numbers—food costing, inventory, labor control, ordering, and vendor management
- Able to give and receive feedback, mentor a team, and create a learning environment
- Calm under pressure, resourceful, and prepared to handle busy service challenges
