Job description

In your role as Sous Chef WLSC, Corporate with The North West Company (NWC), you will manage the WLSC Cafeteria activity according to established processes and based on projected and unforeseen needs. Deliver the right selection of food offerings to maintain and increase sales. Support and develop direct reports.

Your Role :

  1. Maintain strong relationships with vendors to provide fresh, best quality food at the best value for our guests;
  2. Maintain cleanliness, health, and safety standards to the satisfaction of Manitoba Health Inspectors and the Executive Chef. Ensure all external inspections have a compliance plan created and executed while advising the Chef and building Maintenance Manager of any required repairs;
  3. Prepare and develop menu items consistently to the standards set by or agreed upon by the Executive Chef while ensuring direct reports do the same. Properly rotate daily specials and soup of the day. Review and update the cafeteria’s menu twice a year;
  4. Build a capable team that supports the business and services being offered. Hold staff accountable to expectations while being quick to coach and take corrective action when needed;
  5. Develop and maintain customer service through pleasant interactions, development of value-added services, and being receptive to customer feedback;
  6. Maintain adequate knowledge of operations at the head office to assume a leadership role during vacations or high-volume periods;
  7. Handle cash and take responsibility for daily deposits and sales tracking, actively tracing errors and mistakes. Develop projections based on historical data;
  8. Order supplies to ensure adequate stock of food, paper goods, and chemicals, avoiding waste while meeting customer needs;
  9. Accurately develop and cost recipes, maintain a menu-wide Food Cost Percentage, and manage expenses according to the annual budget.

Desired Skills & Experience

  1. Must possess a High School diploma and at least one year of cooking experience, or be enrolled in a recognized culinary program;
  2. Minimum of 4 years full-time cooking experience with at least 1 year in a Sous Chef or higher position;
  3. Extensive knowledge of food styles and trends;
  4. Experience creating daily specials;
  5. Experience working a cash register;
  6. Experience supervising employees;
  7. Strong verbal communication skills and ability to provide exceptional customer service;
  8. Flexibility to work different hours as needed.
