Production Professional Job Description

The production professional executes operations related to their department, ensuring adherence to established standards concerning quality, recipes, presentation, hygiene, health, and safety. They also participate in tasks such as housekeeping and assembling food products to support the smooth running of the business.

Responsibilities include:

  1. Understanding and organizing work based on departmental orders
  2. Ensuring timely completion of production requests
  3. Planning and managing raw material reserves
  4. Operating and maintaining equipment safely
  5. Maintaining cleanliness of work areas, including production, storage, and equipment
  6. Participating in food assembly and packaging
  7. Training new employees
  8. Preparing raw ingredients like fruits, vegetables, meats, and breads
  9. Performing cooking, assembly, and decoration of dishes
  10. Making pasta, creams, toppings, entremets, and other items according to recipes
  11. Assembling dishes or desserts from various departments
  12. Preparing mixtures such as toppings, creams, sauces, and mayonnaise
  13. Managing stock rotation of raw materials
  14. Applying quality, hygiene, health, and safety standards established by Première Moisson
Skills Required
  • Training: DEP in pastry or cooking, or equivalent; experience may substitute training
  • 2 to 4 years of relevant work experience
  • Proficiency in cooking and pastry techniques
  • Ability to follow directions from supervisors
  • Methodical, adaptable, focused on quality, results, and teamwork
